    My life is constantly on-the-go. If I have time to sit down and make a full meal and dessert, I’m lucky. My new favorite dessert is a 10-minute recipe for a delicious cake. I mean how amazing is that! But that’s besides the point.

    When you’re on-the-go sometimes a large journal is too much to take on the journey. You need something more compact so that you can fit everything with you. Just because you want something small and compact doesn’t mean you want something plain and boring. A cover should give just as much inspiration as the scenery around you in my opinion.

    One thing I love to do when the season changes is redecorate my bed room a tad to get into the spirit!

    I’ll do for summer a light stripped bedding for Autumn, a warm yellow print for spring, a white for autumn, and for winter a deep blue or a deep red color.

    Changing things up a bit helps me to feel excited for any season that is coming my way.

    image9Every year it’s the same meal: turkey, mashed potatoes, green bean casserole, and dinner roles. And yes, it’s delicious, but why not try something else? I’ve been thinking about trying duck this year around. I know it’s not traditional, but I’ve been wanting to switch it up for a while now.

    Before you dismiss this idea, take a look at this recipe. I mean, how incredible does that look?! If it’s not a hit, then I can always go back to the classic turkey next year, but why not give it a shot.

    Thanksgiving is around the corner which you know what that means…another dinner I get to prepare! As you can probably guess, this holiday season is my favorite because of all the different recipes I get to try out.

    At the beginning of the month, I’m searching high and low for the next best recipe to try out. And this year didn’t disappoint. Now I can’t resist a good dessert, so I was so ecstatic to find these apple pie cookies. And who doesn’t love leftovers? Here’s an recipe I want to try with all of the leftover cranberries from the day.

    Trying new recipes can be fun, but unless you aren’t fully armed with the best cookware accessories, it can be tricky to get the dish down pat. Birch Press Design has started selling cookware and knives just in time for the holiday season, which is full of delicious food. The pots and pans will be a perfect set for cooking all of my dishes on the morning of Thanksgiving. And I cannot wait to get to slicing with the knives. This delicious, festive soup is perfect for this time of the year and the burst of fall flavors will leave you wanting seconds.     She was kind enough to share her recipe with us (of course, we wouldn’t leave you drooling!):

    Butternut Squash, Apple & Sage Soup

    Yield: serves 4

    Prep time: 10 minutes

    Cook time: 55 minutes

    Total time: 1 hour and 5 minutes

    Ingredients:

    • 2 lbs peeled and cubed butternut squash (fresh or frozen)
    • 1 large yellow onion, diced
    • 1 large red apple, cored, peeled and diced
    • 4 tablespoons unsalted butter, thinly sliced
    • 2 1/2 cups chicken broth
    • 5 large safe leaves
    • 2 teaspoon cumin
    • 1 teaspoon cinnamon
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon cayenne pepper
    • salt & pepper, to taste

    Recipe:

    1. Preheat oven to 400°F. Grease dutch oven with non stick spray.
    2. Add butternut squash, onion, and apple to dutch oven. Stir to combine. Arrange butter slices on top of mixture.
    3. Bake for 45 minutes, stirring every 15 minutes.
    4. Remove dutch oven from oven and transfer to stove top. Add chicken broth, sage leaves, cumin, cinnamon, smoked paprika and cayenne pepper. Stir to combine and bring to a low boil.
    5. Cook for 10 minutes to combine flavors. Puree until smooth with an immersion blender (or by transferring soup to a blender and blending until smooth).
    6. Season with salt and pepper to taste and serve hot!

    Pumpkin Shortbread by Eva Kosmas Flores-4

    It’s no secret that we are huge fans of the fall season. And yummy fall desserts…it doesn’t get any better than that! So when we asked Eva Kosmas Floras of Adventures in Cooking to create a recipe for us, we were ecstatic when she agreed! Don’t settle for just any old cookie, spice this season up with these delicious Pumpkin Shortbread Cookies.Take a look at our Fall LookBook or our site to see our collection.     Ingredients

    • 3/4 pound unsalted butter (3 sticks), softened
    • 1 cup granulated sugar
    • 1/2 cup pumpkin puree
    • 1/2 teaspoon allspice
    • 1/2 teaspoon vanilla extract
    • 1/4 teaspoon nutmeg
    • 1/4 teaspoon cinnamon
    • pinch of salt
    • 3 3/4 cups all-purpose flour

    Recipe

    1. Preheat the oven to 350 degrees Fahrenheit.
    2. In the large bowl of an electric stand mixer fitted with the paddle attachment, beat together the butter and sugar at medium high speed until smooth and fluffy, about 1 minute.
    3. Add the pumpkin puree, allspice, vanilla, nutmeg, cinnamon, and salt and mix at medium speed until combined. Add the flour, a little at a time, mixing at medium low speed until a smooth thick dough forms.
    4. Turn the dough out onto a well-floured smooth working surface and roll out the dough until it is about 1/4-inch thick.
    5. Use a circular cookie cutter about 2 inches in diameter to cut out the cookie shapes and place them on an ungreased baking sheet.
    6. Bake them at 350 for 25 minutes, or until very light golden around the edges.
    7. Remove the pan from the oven and allow the cookies to cool completely on pan before removing with a spatula. The shortbread cookies can be kept in an airtight container in the refrigerator for up to 1 week.
